To make this delicious meatfree crispy chilli chicken recipe, firstly slice the Naked Without the Cluck nuggets diagonally into half pieces.
Secondly, in a bowl, mix the cornflour, salt, garlic powder, pepper and chilli flakes with some water to form a thick batter. Then coat the sliced nuggets without breaking.
Next shallow fry the coated nuggets in a deep pan until they are crispy and brown on both sides – about 3-4 minutes each side. When cooked, remove and place on greaseproof paper.
Then in a wok fry the finely chopped onion, garlic and ginger – and mix well. Then add the rest of the vegetables, a pinch of salt and pepper and cook for 1 min.
Finally, in a bowl, combine all the sauces together, including vinegar – and mix well. Pour this over the vegetables and crispy chilli chicken nuggets, making sure that everything is coated.
Serve your meatfree crispy chilli chicken with rice or noodles and garnish with fresh coriander, and finely chopped spring onions. Enjoy!
